    Default Watcha cookin'?

    Not sure how many people on here like to cook, but thought a recipe thread might be a nice idea. Those who've met me, certainly know I like to eat, but a selecter few, know I also like to dabble in the kitchen.

    In any event, with the game season upon us and the nights getting colder, think I'll have to dig up my favourite Ramsay recipe (for venison with creamed cabbage in a chocolate sauce) and pair it with a nice Burgundy. It's actually pretty easy to pull off and definitely pretty impressive.

    Ramsey's scrambled egg recipe from his Christmas show is about the best scrambled eggs I have ever cooked/eaten. And I don't use the cream/butter (I tend to use margarine and milk). Nice simple recipe that tastes devine. I've pared it down to just the basics when I make it but it is so nice.

    Know the one you're talking about. Basically only use his technique now. Always use butter, but have substituted the cream with yoghurt or soured cream.

    as someone who cooks for a living, i have a vast amount of recipes and techniques that i've compiled over the years. right now i'm on a pretty hard simple, rustic, american kick. lots of nice stuff this time of year with apples and root veg really starting to crop up and deer season right around the corner.

    menu for tonight (first day off in 22, calls for a nice meal with the little lady): grilled pork chop with peach butter, mushroom spaetzle, roasted chantrelles. also some cornbread and an apple salad with bacon, stracciatella, honey and black pepper. pretty excited.

    Do you bake or fry your cornbread? (sounds baked with the menu).

    bake in a cast iron skillet. if you want the recipe for any of it i'm always happy to share. i would have loved to host everyone, but i dont think my better half would have approved those plans for our first night off together in forever.

    Made something simple last night. I made oven roasted drunken chicken with a nice rice beer (staying away from alcohol for about two months; I started Sunday so that was the only way I can drink), cous cous with mix vegetables and spinach with chopped garlic.

    Where do you work, if you don't mind me asking? I'm a pro as well.... I'm at a private dining/supper club on the Upper East Side now.

    I've been doing a lot of rustic American stuff recently as well, the lady and I picked up some spaghetti squash and some makings of a simple bolognese. excited for this in the next couple of days.
